KMC ColdSwell is a pre-gelatinised potato starch designed for applications where conventional cooking is impractical. In cream cheese and cold-set dairy, it delivers gel strength and moisture retention without the shear sensitivity of heat-processed starches.
What is ColdSwell?
ColdSwell is produced by KMC — a Danish, grower-owned cooperative — through a spray-drying process that pre-gelatinises the starch granules. Unlike native starches, ColdSwell hydrates fully in cold water, making it suitable for no-cook or low-temperature manufacturing processes.
Application in Cream Cheese
In cold-process cream cheese, the functional challenge is gel formation at low temperatures without heat damage to the dairy proteins. ColdSwell addresses this directly: addition rates of 1.5–3.5% (on final product weight) deliver controlled firmness and reduced syneresis.
| Addition Rate | Texture Effect | Syneresis |
|---|---|---|
| 1.5% | Light, spreadable | Moderate reduction |
| 2.5% | Standard, sliceable | Significant reduction |
| 3.5% | Firm, portion-stable | Maximum reduction |
Labelling
ColdSwell carries a clean-label declaration in most markets: 'potato starch'. It is non-GMO, produced without additives, and available with Kosher and Halal certification on request from KMC.
How to Trial
Shaan International can arrange product samples and full technical documentation — including TDS, SDS, and application notes — for manufacturers wishing to trial ColdSwell in their production environment.
